Pear Pudding

  • 2- 15 oz cans pear halves
  • 1/3 C. all-purpose flour
  • 1/4 C. granulated sugar
  • 1/2 C. plain low-fat yogurt
  • 2 eggs
  • 1 tsp. vanilla
  • 3 T. brown sugar

Preparation

Step 1

1. Preheat oven to 375 degrees. Drain pear halves, reserving ¾ C. syrup. Score round side of pear halves with shallow crosswise cuts. Set pears and syrup aside.
2. In a blender, place flour and sugar. Cover and blend until combined. Add yogurt, eggs, vanilla, and the reserved pear syrup. Cover and blend until smooth.
3. Grease quiche dish. Arrange pear halves, cut side down, in bottom of dish. Pour batter over fruit. Sprinkle with brown sugar. Bake for 30-40 minutes or until center is just set when gently shaken. Cool for 30 minutes. Serve warm.
