Pineapple Upside Down Cake

Ingredients

  • 1/4 lb. butter (1 stick melted)
  • 1 cup brown sugar
  • 1 can pineapple slices, drained with juice reserved
  • 1 small jar maraschino cherries
  • 1 box yellow cake mix
  • 3 eggs
  • 1/2 cup oil
  • water
  • Pam cooking spray

Preparation

Step 1

Preheat oven to 350
Spray pan with Pam
Pour the melted butter into the pan, then sprinkle with the brown sugar. Place pineapple slices evenly on the bottom of the pan, and place a cherry in the center of hole of each pineapple slice. Mix cake, eggs, oil, pineapple juice plus enough water to equal 1 cup of liquid, according to pkg directions,usually 2 minutes.
Pour carefully over the fruit in the pan, being sure that the fruit does not shift around.
Bake according to the cake mix directions, testing for doneness with a toothpick.
Cool in pan 15 minutes then place a platter or tray on top of pan, then quickly and carefully invert the pan so the juices don't pour out.
