New Orleans Corn and Sausage Bisque

Ingredients

  • 4 tbsp butter
  • 2 tbsp flour
  • 1/2 cup chopped onions
  • 1 lb smoked sausage sliced into 1/2 in medallions
  • 1 qt milk
  • 1 16oz can cream style corn
  • 1 10 1/2oz can cream of potato soup
  • 1 tbsp tabasco sauce
  • 1 tbsp cajun seasoning
  • 1/2 cup cheddar cheese shredded
  • 1/4 cup parsley

Preparation

Step 1

In a large pot, melt butter. Add flour and blend thoroughly. Add onions and smoked sausage; saute mixture over medium heat for 5 minutes. Add next 5 ingredients, cover and cook over low heat for 20 minutes stirring occasionally. If desired, before serving sprinkle with cheese and parsley.
