Ingredients
- 5 tbsp oats (I used gluten free rolled oats but quick cooking could work better)
- 1 egg
- 2 tbsp milk
- 1 tsp brown sugar
- Pinch of baking powder and baking soda
- Fresh blueberries
Preparation
Step 1
Beat the egg in a coffee mug then mix in oats, sugar, milk, baking soda and powder.
Once well combined fold in the blueberries then pop the coffee mug in the microwave for 1-2 mins.
Make sure to keep an eye on it while it’s cooking.
Turn the mug upside down on a plate, the little cake should slide out easily.
Grab a spoon and enjoy for breakfast or as a healthy dessert!
