Mango and Jicama Salad

Ingredients

  • 1 lime, juiced
  • 2 tsp honey
  • 1 tsp cumin
  • 1/4 tsp salt
  • 1 1/2 cups thinly sliced peeled mango (can use frozen if you can't find fresh)
  • 1 1/2 cups julienne-cut peeled jicama
  • 1/4 cup thinly sliced red onion
  • 1 avocado, peeled and cubed
  • 1 jalapeno, seeded and diced
  • cherry tomatoes, halved
  • 1/4 cup chopped cilantro

Preparation

Step 1

Whisk lime juice, honey, cumin and salt in a small bowl. Set aside. In a separate bowl, gently toss mangos, jicama, red onion, avocado, jalapeño and cilantro. Toss with dressing and serve.
