Harvest Beets

Ingredients

  • 2 cups white sugar
  • 1 cup water
  • 8 tblsp. margarine
  • 2 tblsp. corn starch
  • 1 cup vinegar

Preparation

Step 1

Boil beets till soft (not mushy). Remove skins and slice or quarter. Put to side to cool. Mix sugar & corn starch. Add water & vinegar. Boil 5 minutes. Remove from heat and add margarine. Pour mixture over beets in containers. Let stand 1/2 hour.

1 receipe will cover 6 cups diced beets. Harvest Beets are freezable.
