Ingredients
- 3/4 lb. wagon-wheel pasta
- 2 cups lightly packed fresh basil leaves
- 2/3 cup light mayonnaise
- 1/2 cup skim milk
- 2 tbsp. distilled white vinegar
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 3 large tomatoes, diced
- 1 large cucumber, peeled, halved, seeded and thinly sliced
- 1 medium red onion, finely chopped
- 1/4 cup grated parmesan cheese for serving
Preparation
Step 1
Cook the pasta in boiling salted water according to package directions; drain and rinse well with cold water. Place pasta in a large bowl.
Meanwhile, in a food processor, combine basil, mayonnaise, milk, vinegar, salt and pepper. Process until the basil is finely chopped and the dressing is well blended, scraping down the bowl occasionally with a rubber spatula.
Pour the dressing over the pasta and toss to coat. Add the tomatoes, cucumber and onion and toss again to mix. Pass the grated parmesan cheese separately for sprinkling over each portion of the salad.
