Ingredients
- 2 lbs russet or yukon gold potatoes, whole
- 1 stick butter
- 1 cup hot milk
- Salt & Pepper
- 2 tsp mustard seed
- 2 tsp cumin
- 1/2 cup frozen peas
- 2 tsp coriander seed
- 1/2 tsp turmeric
- 1/2 tsp salt
Preparation
Step 1
Toast mustard, cumin, and coriander seeds in a skillet. Add butter,turmeric and salt. Add peas to warm through; remaove with a slotted spoon. Cover potatoes with cold salted water; simmer 45 minutes. Drain, peel and mash with spiced butter. Add milk, and salt & pepper to taste; mash until smooth and fluffy. Top with peas.
