Ingredients
- 1 24 oz bag shredded potatoes
- 1 large carrot,peeled
- 1 med. onion,peeled
- 2 eggs,beaten
- 2 tsp salt
- 1 tsp baking powder
- 3 Tbs. matza meal,or flour
- veg. oil for frying
- 2 cups chunky apple sauce
- cinnamon
- sour cream
Preparation
Step 1
Heat 1/2" oil in a large pan over med.-high heat. Place potatoes in a large bowl Using a hand grater,grate the carrot and onion into the bowl. add eggs to the bowl. Add salt and baking powder,then sprinkle meal or flour. Combine vegetables and meal with a wooden spoon.
Fry in patches of 4-6 patties depending on the size of your pan about 3 min. on each side. Put applesauce and cinnamon in a saucepan over med. heat and warm for 3-4 min. Drain latkes on paper towels or parch.lined tray. Serve with warm applesauce and sour cream.
