Mason Jar Pigs in a Blanket Pancakes with Maple Fried Apples

By

Make-Ahead Tip: Serve Maple Fried Apples with Pigs in a Blanket, or place 1/2 cup portions in 7 (8-ounce) wide mouth mason jars or jelly jars and store in the refrigerator or freezer. To reheat, remove lid and microwave for about 30 seconds or until hot. Jar will be hot. Makes 7 jars (1/2 cup each).

Ingredients

  • Maple Fried Apples
  • 1/2 stick butter
  • 6 Granny Smith apples
  • 1/2 tsp. kosher salt
  • 1/2 c. maple syrup
  • 1 tbsp. brown sugar
  • 1 tsp. cinnamon
  • Pigs in a Blanket Pancakes
  • 2 c. flour
  • 1/2 tsp. kosher salt
  • 4 tsp. baking powder
  • 2 tbsp. sugar
  • 1 1/2 c. milk
  • 2 eggs
  • 4 tbsp. melted butter
  • 14 breakfast sausage links

Preparation

Step 1

1 For the apples: In a large skillet over medium heat, melt butter. Once the butter is melted, add the rest of the ingredients, and cook for about 30 minutes or until the apples are tender and the liquid is absorbed.

2 While apples are cooking, prepare the Pigs in a Blanket Pancakes.

3 For pancakes: Preheat oven to 350 degrees F. Grease 7 (8-ounce) mason jelly jars, set aside. In a large bowl, whisk together the dry ingredients. In another bowl, whisk together the milk and eggs, then pour into dry ingredients, stir well, and stir in butter. Divide batter between the seven jars, a bit over 4 ounces in each jar. Push 2 sausage links down in each jar. Place jars on a sturdy jelly roll pan, and bake for 17 minutes or until a toothpick comes out clean. When baked, remove from oven and run a knife around each cake and dump out onto a plate. Slice each into 5 medallions and serve with Maple Fried Apples and maple syrup, if desired.
