Beef & Spinach Pitas

Ingredients

  • 1 pound extra-lean ground beef
  • 1 large onion, chopped
  • 2 cloves garlic, pressed
  • 8 oz. mushrooms, sliced
  • 1 bag spinach
  • 1/2 teaspoon thyme
  • Salt and pepper to taste
  • 6 whole-wheat pitas
  • 1 tomato, chopped
  • 1/2 cup low-fat sour cream

Preparation

Step 1

In a skillet, cook beef and onion over med-high heat till browned. Drain and blot beef with paper towels to absorb excess grease. Add garlic, mushrooms, spinach and thyme, and cook for about 3 min. till spinach wilts. Salt and pepper to taste.
Spoon beef mixture into pitas and top with tomato and sour cream.

Serving suggestion: A green salad and a bowl of baby carrots work nicely.
