Ingredients
- 1 small shredded zucchini
- 1 pouch (6.5 oz) cornbread mix
- 1 large egg
- 1/2 cup milk
Preparation
Step 1
Microwave shredded zucchini on medium-high, 2 minutes; drain.
Combine zucchini, cornbread mix, egg and milk. Let stand 5 minutes.
Heat oil in a pan; drop heaping tablespoons of batter into hot oil.
Cook 1 1/2 - 2 minutes on each side.
