Macaroni, Tomato and Beef casserole

Pasta with lots of pep - can't remember where I received this recipe

Ingredients

  • 1 lb ground beef
  • 2 cups raw macaroni
  • 1/2 cup chopped onion
  • 1 clove garlic
  • 1/2 cup vegetable oil
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 2 1/2 cups tomato juice

Preparation

Step 1

Brown beef in skillet. Remove to a 6 cup casserole. Put macaroni, onion, garlic, and oil in skillet over
Medium heat and stir until the macaroni is yellow, watch carefully. Add to casserole. Heat remaining ingredients in saucepan and pour over all.

Bake 30-40 minutes
Note: the 1/2 cup oil is correct, the macaroni soaks up a lot.
Add beef broth to leftovers for a hearty soup.

You may also add 1 cup grated cheddar cheese before baking.
