Ingredients
- 1 pound fresh spinach or 10oz frozen peas thawed
- 4 tbs chicken broth
- 4 -6 cloves garlic crushed
- 8 tsp extra virgin olive oil
- 1 cup orzo
- salt and pepper to taste
Preparation
Step 1
1. Place a large pot of lightly salted water to boil for orzo
2. Rinse and drain spinach. Place in a large sauce pan, cover and cook 5 minutes, tossing once ot twice, drain and reserve in bowl
3. Heat chicken broth in same pan , add garlic, stir about 30 seconds, Return spinach or peas to pan and add 4 tsps olive oil. and cook for 2 minutes, stirring occassionally.
4. Meanwhile, cook Orzo as directed, boil for approximately 9-10 minutes, drain and toss with the remaining olive oil. Add salt and pepper to taste. Toss orzo with spinach or peas and serve
