Ingredients
- 2 lbs russet or yukon gold potatoes, whole
- 1/2 stick butter
- 1 cup hot milk
- Salt & Pepper
- 1/2 lb bacon, cooked and chopped
- 2-4 Tbsp bacon drippings
- 1/2 lb sharp cheddar cheese, grated
- 1/4 cup parsley, minced
- 1/4 cup scallions, minced
Preparation
Step 1
Cover potatoes with cold salted water; simmer 45 minutes. Drain, peel and mash with butter and bacon drippings. Add milk, some of the bacon, cheese, parsley, scallions and salt & pepper to taste; mash until smooth and fluffy. Top with remaining bacon.
