Ingredients
- 1 pound spaghetti
- 1 10oz-12oz frozen whole leaf or chopped spinach (about 1 1/2 cups)
- 4 oz italian bread, cut into 1/2 " cubes(about 12 cups)
- 2 tbs butter
- 1/4 cup extra virgin olive oil
- 2 tbs minced garlic
- 1/4 tsp crushed red pepper
Preparation
Step 1
1. Cook Pasta in lightly salted boiling water till el dente, add spinach to pot when you have 5 minutes left of cooking time. When done drain reserving at least 1 cup of pasta cooking water
2. Meeanwhile, put bread cubes in food processor and pulse to coarse crumbs form
3. Melt butter in large skillet over medium heat, add crumbs and cookm 7-8 minutes, stirring occassionally until crisp and golden. Transfer to small bowl. let skillet cool slightly. Add olive oil and garlic to skillet, heat one inute or until garlic is fragant.
4. Add gralic oil to pasta, with crushed red pepper and i cup of pasta cooking water, toss to mix well
5. Serve in a large serving bowl , sprinkle top with bread crumbs
