Coconut Tarts

Ingredients

  • ***PASTRY***
  • 1/2 cup butter, chilled and cubed
  • 1/2 cup sugar
  • 1 1/2 cups all-purpose flour
  • 1 egg
  • 1 teaspoon baking powder
  • ***FILLING***
  • 1/2 teaspoon raspberry jam
  • 2 cups coconut
  • 2 eggs
  • 3/4 cups white sugar
  • 1/4 teaspoon almond extract

Preparation

Step 1

Pre-heat ooven to 350.

Make pasrty. Cream all ingredients together and chill dough. Press into small muffin tins.

Make filling. Beat all ingredients together.

Bake 15 minutes.
