Ingredients
- 2 1/2 cups water
- 3/4 cup sugar
- 1 TBS grated lime rind
- 1/2 cup fresh lime juice (about 4 limes)
- 1/2 cup coconut milk
Preparation
Step 1
1. Combine all ingredients in a large saucepan over medium heat. Cook for 3 minutes or until sugar dissolves, stirring constantly. Remove from heat and cool completely.
2. Pour cooled mixture into an 11X7 baking dish. Cover and freeze for 8 hours or until firm.
3. Remove mixture from freezer; let stand 10 minutes. Scrape entire mixture with a fork until fluffy.
Makes 8 servings. Each serving = 3 Weight Watchers points.
