Ingredients
- 1 orange
- 3 firm, ripe bananas
- 3/4 cup butter
- 1/4 cup firmly packed brown sugar
- 1 TBS minced candied ginger
- 2 TBS Cointreau or other orange-flavored liquor
Preparation
Step 1
1. Grate enough peel from orange to make 1/2 tsp. Cut orange in half and extract enough juice to make 1/4 cup. Peel bananas and slice diagonally 1/2" thick.
2. Melt butter in large skillet over medium heat. Add brown sugar, juice, peel, and candied ginger. Stir until blended and bubbly. Add bananas and gently turn fruit over medium-high heat until hot and sauce bubbles, 1-2 minutes. Stir in liquor.
Serve over vanilla ice cream, or fold into crepes.
Makes 6 servings. Each serving = 7 Weight Watchers points.
