Ingredients
- 2 cups mini lentils
- 1 carton broth
- 2 cloves garlic, minced
- 1 yellow onion, chopped
- 1/4 bunch parsley, minced
- 4 big leaves basil, minced
- 1 tsp chimichurri sauce (olive oil, garlic, balsamic, red wine, parsley, peppers, salt, pepper)
- 1 zucchini, sliced and quartered
- 1 chicken breast, opt.
Preparation
Step 1
Sautee herbs, veggies and chicken. Add to broth and lentils. Simmer ~1 hour.
