Lemon Sponge Pudding

Ingredients

  • 1 tbsp. butter
  • juice and rind of 1 lemon
  • 1 cup milk
  • 2 eggs, separated
  • 1 cup sugar
  • 2 tbsp. flour

Preparation

Step 1

Beat egg whites until soft peaks form.

Combine all other ingredients and fold in beaten egg whites.

Put mixture into greased casserole dish. Place in pan of hot water.

Bake at 300 deg. for 45 minutes.

There willl be lemon pudding on the bottom and sponge on the top.
