Orange Whip

Ingredients

  • 1 cup sugar
  • 5 tbsp. cornstarch
  • 1/4 tsp. salt
  • 1 cup orange juice
  • 1 cup boiling water
  • 2 eggs
  • 1 1/2 tbsp. lemon juice

Preparation

Step 1

Mix 1/2 cup sugar, cornstarch and salt in top of double boiler. Add orange juice and stir. Add boiling water. Cook 15 - 20 minutes over boiling water.

Beat egg yolks with remaining 1/2 cup sugar. To this mixture, add the hot mixture from double boiler gradually, stirring all the time. Return to double boiler and cook 1 minute.

Remove from heat and add lemon juice. Then fold in beaten egg whites.

Chill well.
