Greek Veggie Salad 11 (with Dijon Mustard and Lettuce)

Ingredients

  • 1/2 large cucumber, chopped
  • 1 roma (plum) tomato, chopped
  • 1/2 (5 ounce) jar pitted kalamata olives
  • 1/2 (4 ounce) package feta cheese, crumbled
  • 1/2 red onion, halved and thinly sliced
  • 1/4 (10 ounce) package baby greens
  • 1/4 (10 ounce) package romaine lettuce leaves
  • 3 Tbs. olive oil
  • 1/2 tsp. garlic powder
  • 1/2 tsp. dried oregano
  • 1/2 tsp. dried basil
  • 1/2 tsp. Dijon mustard
  • 1/2 tsp. lemon juice
  • 1/4 c. red wine vinegar

Preparation

Step 1

Mix vegetables, cheese and olives. In a separate bowl, mix other ingredients. Pour dressing over the vegetables, and toss to coat.
