Fresh Pineapple Relish

Ingredients

  • 2 cups diced (1/2") fresh ripe pineapple
  • 1/2 cup diced (1/4") red bell pepper
  • 1 tablespoon fresh lime juice
  • 1 tablespoon sugar
  • 1 tablespoon chopped fresh mint
  • 2 teaspoons minced peeled fresh ginger

Preparation

Step 1

Combine all of the ingredients and refrigerate, covered, for at least 6 hours for flavors to blend.

This recipe yields 2 cups.
