Light Lemon Yogurt Sauce

  • 1 cup plain nonfat yogurt
  • 1 teaspoon finely-grated lemon zest
  • 1 tablespoon fresh lemon juice
  • 1/4 cup chopped fresh mint or parsley if available (or 1/2 tspn dried tarragon)
  • Salt to taste
  • Freshly-ground black pepper to taste

Preparation

Step 1

Combine all of the ingredients in a small bowl. Refrigerate, covered, until needed.

This recipe yields 1 cup.
