Ingredients
- 1 cup plain nonfat yogurt
- 1 teaspoon finely-grated lemon zest
- 1 tablespoon fresh lemon juice
- 1/4 cup chopped fresh mint or parsley if available (or 1/2 tspn dried tarragon)
- Salt to taste
- Freshly-ground black pepper to taste

Combine all of the ingredients in a small bowl. Refrigerate, covered, until needed.
