Corn Flake Macaroons

Ingredients

  • 2 egg whites
  • 1 cup brown sugar
  • 2 cups corn flakes
  • 1/2 cup chopped dates
  • 1 cup shredded coconut
  • 1/2 tsp. vanilla

Preparation

Step 1

Beat egg whites until stiff but not dry. Gradually beat in brown sugar. Fold in corn flakes, chopped dates, coconut and vanilla.

Drop in small mounds onto a well-greased baking sheet and bake in 325° F (160° C) oven for 20 minutes or until golden.

When done, place the pan on a damp cloth and remove the macaroons immediately. If they harden on the pan before you can remove them, place back in oven for a few minutes to soften.
