RASPBERRY WHITE CHOCOLATE MOUSSE

Ingredients

  • 1 c chopped white chocolate
  • 1/2 c raspberry puree unseeded
  • 1 tsp. gelatin
  • 1 c heavy cream

Preparation

Step 1

. Heat the chocolate and melt it

. Warm the puree and combine it with the chocolate

. Bloom the gelatin in 2Tblsp. of cold water, heat and stir until dissolved, add into the raspberry/chocolate mixture

. Whip the cream until fluffy and gently fold in the slightly warm raspberry/chocolate mixture, chill until used
