Rice with Black Beans

Ingredients

  • 1 medium onion, chopped
  • 1 T margarine
  • 1 can (14 1/2 oz) stewed mexican tomatoes
  • 1 can (16 oz) black beans, rinsed and drained
  • 1 t oregano
  • 1/2 t garlic powder
  • 1 1/2 C Minute Instant Rice
  • 1 C water

Preparation

Step 1

In medium saucepan melt margarine and cook onion until tender. Add tomatoes, beans, oregano, and garlic powder. Bring to boil. Stir in rice. Cover, reduce heat and simmer 5 minutes. Remove from heat and let stand 5 miunte; fluff with fork and serve.
