Ingredients
- Muffins:
- 1/2 C. walnuts, chopped
- 1 1/2 C. all-purpose flour
- 3/4 C. brown sugar, packed
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1/3 C. vegetable oil
- 1 egg, lightly beaten
- 1/2 C. buttermilk
- 1 tsp. vanilla
- 1 C. rhubarb
- Topping:
- 1/4 C. brown sugar, packed
- 1/4 C. walnuts, chopped
- 1 T. cinnamon
Preparation
Step 1
In large bowl, combine flour, sugar, baking soda, and salt. In separate bowl, combine oil, egg, buttermilk, and vanilla; stir just until dry ingredients moistened. Fold in rhubarb and walnuts. Fill muffin cups. Sprinkle with topping. Bake at 375 degrees for 20-25 mins.
