White chocolate cake with lemon cream

Ingredients

  • 2 1/4 C flour
  • 2 t baking powder
  • 1/2 t salt
  • 8 oz white chocolate chopped
  • 3/4 C butter
  • 3/4 C sugar
  • 4 large eggs
  • 2 t vanilla
  • 1 1/4 C milk
  • Lemon cream
  • 1/4 C confectioner's sugar
  • 1 1/2 C greek yogurt
  • 1 C heavy cream
  • 1 c lemon curd

Preparation

Step 1

Heat oven to 350, prep 3 8" cake pans
Mix flour, baking powder, salt in bowl, whisk to blend. Melt chocolate. In large bowl, beat butter and sugar with mixer until light weight. Beat in eggs one at a time until well blended, add vanilla, add melted chocolate, beat until combined, about 1 min. Reduce mixer to low, alternatively adding flour and milk. Evenly divide batter among prepared pans. Bake 25 to 30 min.
Lemon cream:
Mix confectioners sugar, yogurt. In other bowl, beat cream cheese on high until stiff peaks form, fold into yogurt mix and refrigerate. Place one cake layer on serving place, spread with 1/3 C lemon curd then 1 C yogurt cream; to with aother cake layer and repeat.
