Turkey Sausage with Veggies and Quinoa

Ingredients

  • 1 lb ground turkey
  • 1/2 medium purple onion, sliced
  • 2-3 Tbsp(s) Hot Italian Sausage Seasoning (Con Yeager Spice Company)
  • 1 zucchini, sliced
  • 12 oz mushrooms, sliced
  • 4 roasted red peppers, sliced
  • 2 cups chicken broth
  • 1 cup quinoa, uncooked
  • parsley
  • garlic salt

Preparation

Step 1

Add 2 cups of chicken broth and 1 cup of quinoa in pot. Cover and cook for approximately 15 minutes or as directed on package. Add garlic salt and parsley to season about half way through cooking.

Mix sausage seasoning with ground turkey. In 12 inch skillet brown turkey and onion.

Add Zucchini, mushrooms, and peppers. Cover and let cook for about 5 minutes or until zucchini is tender. Add Quinoa. Mix and cook for about 2 more minutes.


Serve.
