Carrot Mousse

Ingredients

  • 5 fresh carrots, peeled and chopped
  • 2 ounces unsalted butter
  • 1 1/2 cups heavy whipping cream
  • 1/2 Tbsp fresh ginger, chopped
  • 1 tsp saffron threads
  • Pinch of grated nutmeg
  • Salt and white pepper to taste

Preparation

Step 1

Place carrots in pan and heat to boiling with butter, cream, ginger, saffron, nutmeg, salt and pepper. Reduce heat and simmer, covered, stirring frequently until the carrots are cooked through. Blend with immersion blender until smooth, adding additional cream in necessary. Taste and readjust seasoning as needed.
