Ultimate Tomato Slices

For a quick and light vegetarian dinner, try this recipe for ultimate tomato slices with sautéed spinach and garlic and broiled.

Ingredients

  • 8 tomatoes, sliced
  • 2 tablespoons balsamic vinegar
  • 2 cups fresh spinach
  • Garlic, optional
  • Salt, to taste
  • 1 tablespoon lemon juice
  • 1/2 cup cheese, shredded

Preparation

Step 1

Marinate sliced tomatoes with balsamic vinegar for 4 to 6 hours. Bake at 350°F for about 7 minutes or until a little tender.

Meanwhile, sauté spinach and garlic with a dash of salt and lemon juice. Put spinach on top of tomatoes and sprinkle with cheese of your choice (I chose Italian blend) and broil until cheese is golden!
