Ingredients
- 1 1/2 cups water
- 1 cup full fat coconut milk
- 1/4 cup unsweetened almond milk
- 1 cup quinoa
- 2 very ripe bananas, peeled and sliced
- pinch of salt
- Toppings
- maple syrup or raw honey, to taste
- blood orange slices
- pomegranate seeds
- cacao nibs
- chia seeds
- shredded coconut
Preparation
Step 1
Bring the water, unsweetened almond, and only 1/4 cup of the full fat coconut milk to a boil. Add the quinoa and salt. Reduce the heat to a simmer and cook for 20 minutes with the lid on. Once the quinoa is cooked, remove from the heat. Transfer the cooked quinoa onto a large, flat pan.Add the bananas and the rest of the coconut milk, and cook until the quinoa becomes thick and creamy.
Sweeten to taste, and spoon the quinoa into bowls. Garnish.
