Cheddar cauliflower soup

Ingredients

  • 1 tbsp each butter and olive oil
  • 1 white onion minced
  • 2 garlic cloves minced
  • 1 large stalk celery diced
  • 4 cups cauliflower florets
  • 5 chicken broth
  • 1 tsp ground nutmeg
  • 1 cup grated old cheddar
  • salt and pepper to taste
  • croutons to taste
  • chopped chives to taste

Preparation

Step 1

In a big pot heat butter and oil and cook onion about 2 min. Add garlic and celery and cook 1 min more
Add cauliflower chicken broth and nutmeg bring to a boil
Reduce heat and simmer 20 minutes covered until cauliflower is tender
Puree vegetables in blender until smooth
Return soup to pot and stir in cheese a little until melted. Season to taste
Ladle into 4 bowls and sprinkle with croutons and chives
