Ingredients
- 6 ounces cooked egg noodles
- 6 one-inch-thick slices of pork tenderloin
- 1 Tablespoon + 2 Tablespoons butter
- 3 Tablespoons flour
- 2 1/2 cups milk
- 3/4 cup crumbled bleu cheese
- 4 ounce can chopped green chiles
Preparation
Step 1
Preheat oven to 350 degrees. Place cooked noodles in casserole dish. Season the pork tenderloin slices as desired. Heat 1 Tablespoon of butter in a skillet and brown the tenderloin slices. Place tenderloin slices atop cooked noodles. Heat 2 Tablespoons butter in the skillet and add the flour, stirring constantly until combined. Add the milk, whisking, and bring to a boil. Add the blue cheese and stir until smooth. Remove from heat and add the green chiles. Pour mixture over the pork and noodles. Bake until bubbly, about 30 minutes.
