Potato Croquettes

Ingredients

  • 1/2 lb. Yukon gold potatoes, peeled, boiled and mashed
  • 2 T butter
  • 1/4 c heavy cream
  • 1/2 t kosher salt
  • 1/4 t pepper
  • Flour, for dusting
  • 2 eggs, lightly beaten
  • 1/2 c panko bread crumbs
  • Canola oil

Preparation

Step 1

In a bowl combine mashed potatoes, cream, salt and pepper.
On slightly floured surface, roll the potato mixture into 8 balls, then flatten slightly. Place eggs and bread crumbs in separate bowls. Coat patties in egg wash, then bread crumbs.
Pour oil into Dutch oven to 2"; heat to 350 over med-high Heat, and fry balls for 5 mins or until golden brown. Drain on paper towels.
