New England Clam Chowder

Ingredients
- 12 oz. minced clams
- 2 slices lean bacon, diced
- 1 medium onion, chopped
- 2 c. raw potatoes, peeled and diced
- 1 c. milk
- 1 c. half and half
- 1 t. salt
- 2 T. butter
- Paprika
- You may add finely chopped carrots and/or celery with the onion for a more hearty soup.
Preparation
Step 1
Drain clams, reserve juice and add water to make 1 cup. Fry bacon and onion until onion is soft.
Stir in clam juice, water and potatoes.
Simmer covered 15 minutes until potatoes are tender.
Remove from heat and add clams. Cool 5 minutes.
Return to heat and slowly stir in milk and half and half.
Stir constantly to keep from curdling.
Add salt and pepper and stir until hot, but not boiling.
Stir in butter, sprinkle with paprika, and serve.
