Chicken Broccoli Casserole

Oh Baby! What a dish! Rich and wonderful!!! I personally think the lemon juice makes a tremendous difference, so don't leave it out, even if you are a true Southerner and use mayo that already has a hint of lemon, like Helman's.

Ingredients

  • 4 chicken breasts, cooked and chopped
  • 1 large bag broccoli florets (we prefer to splurge and use the real florets, not the pieces)
  • Parmesan cheese
  • 1 can cream of chicken soup
  • 1 c mayo (you can cut to 1/2 if you like)
  • 1 c sour cream
  • 1 c shredded cheddar
  • 1 Tbsp lemon juice

Preparation

Step 1

Preheat oven to 350. Thaw broccoli and drain. Layer it in the bottom of a 13x9 pan. Sprinkle broccoli with Parmesan. Place chicken over the top of broccoli. Mix all other ingredients and pour over chicken.

Bake at 325 for 30-35 minutes.

***I tried doing this recipe with raw chicken and letting it bake while it was in the oven, but it makes the casserole very wet on the bottom and kind of icky. If you want to skip cooking the chicken, you can, just be aware that the chicken adds a lot of moisture not soaked up by the casserole.
