Ingredients
- 2 tbs extra-virgin olive oil
- 2 tbs cider vinegar
- salt and pepper
- 1 small head cauliflower
- 2 thinly sliced gala apples
- 3/4 c torn fresh mint leaves
Preparation
Step 1
In a large bowl, whisk together the olive oil and vinegar; season with salt and pepper. With a mandoline or sharp knife, shave cauliflower into thin slices. Add to dressing along with apples and mint leaves.
