Ingredients
- 2 c flour
- 1/2 c sugar
- 3/4 t baking soda
- 1/2 t salt
- 1 egg
- 2/3 c buttermilk
- 1/3 c orange juice
- 1/3 c melted butter
- 2 t grated orange peel
- 3/4 c dried cranberries
- 1/2 c chopped pecans
Preparation
Step 1
In a bowl, combine the flour, sugar, baking soda, and salt. In another bowl, beat the egg, buttermilk, orange juice, butter and orange peel, stir into dry ingredients just until moistened. Fold in cranberries and pecans. Fill greased muffin cups 3/4 full. Bake at 375 degrees for 18-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. 1 doz.
