South Beach Mashed Potatoes

Ingredients

  • 1 head of cauliflower
  • 2 tabl. light butter
  • 2 tabl. Land o' Lakes fat free half and half
  • Salt and pepper to taste

Preparation

Step 1

Steam or microwave Cauliflower until soft. Puree in a food processor or blender, adding the butter and half and half. Season with salt and pepper.
