Poached Salmon wth Creamy Piccata Sauce

Ingredients

  • 1 lb skinned fresh Salmon
  • 1 cup white wine (divided)
  • 2 tsp EVOO
  • 1 large minced shallot
  • 2 T lemon juice
  • 4 tsp capers, rinsed
  • 1/4 cup sour cream
  • 1/4 tsp salt
  • 1 T dill

Preparation

Step 1

Place salmon in large skillet, add 1/2 cup wine and enough water to cover salmon. Bring to boil over high heat.Reduce to simmer, turn salmon over, cover and cook 5 mins. Remove from heat.
Heat oil in another skillet over medium-high heat, add shallots and cook stirring until fragrant, about 30 seconds, add remaining wine, boil till slightly reduced, 1 min. Stir in lemon juice, and capers, cook for 1 more min. Remove from heat, add sour cream and salt. Top the salmon w/sauce, serve immediately, garnish with dill.
