GARDEN FRESH TOMATO SAUCE

Ingredients

  • 1 cup chopped green peppers
  • 2 cups chopped onion
  • 3 cups mushrooms
  • 6 cloves garlic (or more!!)
  • 1 cup olive oil
  • 26 cups tomatoes
  • skinned, stemmed and cut into quarters
  • 4 bay leaves
  • 2 tablespoons celery seed
  • 2 tablespoons dry mustard
  • 1 teaspoon thyme
  • 2 tablespoons oregano
  • 1 tablespoon pepper
  • 4 tablespoons salt
  • 1/4 cup sugar or honey
  • 5 shakes Tobasco
  • 2 shake hot peppers

Preparation

Step 1

Saute peppers, onions, mushrooms and garlic until transparent.

Add tomatoes and the rest of the seasonings.

Bring to a boil and then lower heat and cover.

Cook 2 hours stirring constantly.

Taste and season accordingly.
