Sausage Potatoes and Peppers

Can be baked or wrapped tightly in tin foil and grilled.

Ingredients

  • 4 baking potatoes, peeled and cut in eighths
  • 2 green peppers, thin sliced
  • 1 small onion, thin sliced
  • 8 (6 inch) pieces Italian sausage, hot or mild
  • Salt and pepper to tase.

Preparation

Step 1

Preheat oven to 400 degrees.
In a sinch deep baking dish, layer ingredients in the order they appear. Season with salt and pepper. Put enough water in pan to come to 1/2 inch deep. Cover with foil and bake about 1 1/2 hours. Remove foil and bake an additonal 1/2 hour (adding more water if evaporated). You can also drizzle with about 1 TBLSP olive oil if desired). Bake until sausage is well browned. Serves four. Recipe can be multiplied for a crowd.
