Wilted Spinach Salad

Ingredients

  • 6 cups spinach leaves torn or baby spinach
  • 1/2 red onion, sliced as thin as possible
  • 3 hardboiled eggs, sliced
  • 7 slices bacon
  • 1/4 cup vinegar
  • 2 tablespoons sugar
  • 2 tablespoons water
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Preparation

Step 1

Combine spinach, onion slices and sliced eggs in a large salad bowl.

Cook bacon until crisp. Drain bacon and chop. Add to salad bowl.

Pour off all but 4 tablespoons bacon drippings and add vinegar, sugar, water, salt and pepper. Heat to boiling, stirring to blend.

Pour over spinach mixture and toss.
