Hawaiian Style Chicken w/ Rice & Sugar Snap Peas

Ingredients

  • 1 1/2 pounds boneless, skinless chicken breasts
  • 1/2 tsp seasoned salt
  • 2 tbsp canola oil
  • 1/4 cup frozen diced green pepper
  • 1/4 cup frozen diced onion
  • 2 cups instant rice
  • 1 (14 ounce) diced pineapple (drained)
  • 1 (18 ounce) jar sweet and sour simmer sauce
  • 1 pound sugar snap peas
  • 2 tbsp butter
  • 1/2 tsp seasoned salt
  • 1 tsp sugar

Preparation

Step 1

Hawaiian Style Chicken w/ Rice

1. Preheat saute pan on medium - high for 1 - 2 minutes

2. Cube chicken and sprinkle with seasoned salt.

3. Add canola oil to pan and swirl to coat.

4. Add chicken, green pepper and onion to pan. Saute for 6 - 8 minutes or until chicken is no longer pink in center.

5. While chicken is sauteing, prepare rice per package instructions, this will take 5 minutes.

6. After 6 - 8 minutes, turn heat on chicken to low and add drained pineapple and sweet and sour sauce. Cook for 2 - 3 minutes or until through.


Sugar Snap Peas

1. Wash peas and cut ridges from stem ends.

2. Heat saute pan on medium - high

3. Add butter to pan and melt.

4. Add peas, seasoned salt and sugar to pan. Saute for 4 minutes, uncovered, stirring frequently.

5. Cover and continue to cook 3 additional minutes. Serve.
