Twice-Baked Cheddar Potato Casserole

Ingredients

  • 10 Bacon strips, cooked and crumbled
  • 8 Baking potatoes, medium
  • 4 Green onions
  • 3/4 tsp Pepper
  • 1 tsp Salt
  • 2/3 cup 2% milk
  • 1/2 cup Butter
  • 2 cups Cheddar cheese
  • 2/3 cup Sour cream

Preparation

Step 1

Preheat oven to 425. Bake potatoes until tender. Reduce oven temp to 350.
Let potatoes cool. Cut lengthwise and scoop out pulp. Mash pulp with butter, sour cream, milk, salt and pepper. Reserve 1/4 C bacon for topping. Mix rest of bacon, 1 C cheese and half the green onions. Spread into an 11x17 baking dish. Top with remaining cheese and green onions. Bake until heated through 15-20 minutes .
