Cod & Shrimp Chowder

Ingredients

  • 4 Tbsp Butter
  • 1 cup Onion - Finely Chopped
  • 1 Cup Celery - Finely Chopped
  • 1/2 Cup Carrots - Finely Chopped
  • 2 Cups Chicken Stock (Boullion Cubes)
  • 1 tsp Salt
  • 1/4 tsp Pepper
  • 1/2 tsp Savory
  • 1 lb fresh Cod Fillets (bite size pieces)
  • 2 cups Milk
  • 4 tbsp Flour
  • 1 cup Table Cream
  • 1 cup Shrimp
  • 2 tbsp fresh Parsley (finely chopped)

Preparation

Step 1

Melt Butter
Add Onions, Celery, Carrots - 5 mins
(soft & not brown)
Add stock\
Add Salt, Peepper, savory
(bring to boil over high heat)
Reduce heat to low
Cover & Simmer - 15 mins
Add Fish - Recover
Simmer 5-6 mins (fish opaque)

In small Bowl
Mix Flour & 1 cup Milk
Stir into pot - Boil until thick & Smooth
Add remaining 2 cups Milk & Cream
Reduce heat to low
Add Shrimp - Simmer 1-2 mins
Remove from heat
Cool to Room temp
Refrigerate Overnight

Reheat over Moderate heat
Do not boil
Sprinkle with chopped Parsley
