Seafood with Romano Encrusted Penne

Ingredients

  • 1 lb med to lg cooked frozen shrimp
  • 1 lb frozen sea scallops cut into squares
  • 1/2 c olive oil
  • 1 clove garlic
  • Grated Romano cheese
  • 1 tsp salt
  • 1-2 tsp pepper
  • 2 t crushed red pepper
  • 15-20 fresh basil leaves chopped coarsely
  • 1 lb penne

Preparation

Step 1

Saute garlic in oil (do not brown).
Add seafood to garlic and oil. Saute until frozen seafood is thawed. The water in the frozen seafood is broth.

Add salt, pepper and red pepper and simmer 5 min.
Add basil and simmer for additional few minutes.

Drain pasta until dry. In lg skillet, add ¼ cup olive oil until hot. Add pasta. Saute until pasta starts to brown lightly, at which time you add coarsely grated romano cheese. Mix and add more cheese. Remove from heat after 1 min. Add to seafood mix and serve with additional grated cheese.
